Recipe - Matcha Protein Pudding
This superfood protein pot is one of my absolute favourites — and for good reason. It's a powerhouse of nutrition designed to energise and focus your mind while genuinely nourishing your body. What I love about this recipe is that every single ingredient has been chosen with a purpose. This isn't just pretty food. The combination of slow-release nutrients, nootropic compounds, and carefully selected superfoods creates a breakfast that supports both cognitive function and gut health, leaving you feeling vibrant, satiated, and mentally clear for hours. No mid-morning energy crash, no bloating, no reaching for the biscuit tin at 11am.
Why These Ingredients Work
- Matcha green tea is rich in EGCG — one of the most studied antioxidants for brain health and cellular protection — alongside L-theanine, which promotes calm, focused alertness without the jitteriness of coffee. The combination of caffeine and L-theanine is genuinely one of nature's best nootropic pairings.
- Chia seeds provide a complete protein source alongside omega-3 fatty acids, soluble fibre, and calcium. The soluble fibre forms a gel in the gut that slows digestion, stabilises blood sugar, and feeds beneficial gut bacteria. They're one of the most nutrient-dense foods per gram that I know of.
- Acai berry powder is loaded with polyphenols and anthocyanins — the pigments that give it its deep purple colour are the same compounds that reduce inflammation, protect the brain, and support cardiovascular health.
- Coconut milk provides medium-chain triglycerides (MCTs), which are rapidly converted to energy by the liver and can cross the blood-brain barrier to fuel cognitive function. A genuinely good fat for the brain.
- Cinnamon helps regulate blood sugar by improving insulin sensitivity — even a small pinch with a carbohydrate-containing meal can reduce the glucose spike.
- Cold-pressed apple juice (in the compote) retains more of its natural enzymes and polyphenols than heat-processed juice, and provides natural sugars that are buffered by the chia and fibre in the compote — so you get the sweetness without the spike.
Ingredients — Matcha Chia Pudding Layer
- 4 tablespoons chia seeds
- 1 cup coconut milk
- 4 tablespoons desiccated coconut
- 1/2 teaspoon matcha green tea powder
- 1 pinch cinnamon
- Optional: collagen or vegan protein powder
- Optional: Okinawa sea minerals
Ingredients — Raspberry Acai Berry Chia Compote Layer
- 1/2 cup frozen berries
- 2 tablespoons chia seeds
- 1/2 cup cold-pressed apple juice
- Juice of 1/2 lime
- 2 teaspoons acai berry powder
- 1/4 teaspoon vanilla paste
Method
Matcha chia layer:
- Mix all ingredients thoroughly until the matcha is fully combined — no green clumps!

Berry compote layer:
- Blend all ingredients together until smooth
- Refrigerate to set alongside the matcha layer — the chia will thicken it beautifully
To Serve
- Spoon the matcha pudding into your jar or bowl first
- Top with the raspberry acai compote
- Drizzle with tahini or cashew cream
- Sprinkle with homemade granola
- Garnish with fresh berries and optional edible flowers
