I got my inspiration for this vibrant pink beetroot and feta cheese dip, whilst I was sat on beach having brunch in Ibiza at a very nice hotel. The recipe was essentially created by me guessing the ingredients, but it turned out wonderfully and always receives great responses. Now the weather is warming up we are all becoming more sociable, get this colourful number on display to wow your friends at your next BQQ. Kids LOVE the fact it’s bright pink as well!

The Dips Nutritional Benefits:

  • Beetroot supports cardiac health by helping to lower blood pressure (though the effect lasts only 24 hours), so for those of your looking to support their heart health naturally this is a good one. I would also look at having 50ml of cold pressed beetroot juice daily if this is the case.
  • I use goats or sheep’s cheese over cows dairy as it’s easier to digest due to having smaller proteins. Makes sense really as a goat or sheep has one stomach just like us, a cow has 4 stomachs so it makes sense that their proteins are larger. I find working with intolerances in children and adults, this to be much better for them.
  • Adding a tablespoon of organic kefir promotes gut health by introducing beneficial bacteria. This also loosens the mixture up slightly which is handy in the blender.

Recipe and Ingredients:

  • 4 small beetroots, boiled
  • 250 grams feta cheese (preferably goat's cheese)
  • 1 tablespoon organic kefir (optional)

Instructions:

  • Boil the beetroots until tender (or buy pre boiled)
  • Place the chopped beetroots in a blender
  • Optional: Add a tablespoon of organic kefir to loosen the mixture and enhance gut health
  • Blend until smooth and well combined
  • Add the feta cheese to the blender

Serving Suggestions:

  • Use as a dip with crackers, bread or veg crudités
  • Add to salads or even dress your burger with it!
